When the cryophorus is tilted, the liquid nitrogen starts to boil and turns into a gas. This gas travels through the tube and goes into the empty tube. When the gas reaches the empty tube, it cools down and starts to turn back into a liquid. This liquid then flows back down to the first tube, and as it does so, it cools the water in the bottom of the second tube.
This process keeps happening over and over, with the liquid nitrogen turning into a gas and then back into a liquid. Every time it turns back into a liquid, it cools down the empty tube and anything inside it.
