Dòuchǐ

Dòuchǐ is a Chinese food that is sometimes called "fermented tofu." Have you ever had pickles? Just like pickles, dòuchǐ is made by letting bacteria grow on the food. But instead of cucumbers, dòuchǐ is made with tofu! The tofu is mashed up with a special kind of fungus that makes it taste tangy and a little sour. People in China like to eat dòuchǐ with rice or noodles, or put it on top of vegetables or meat. It might sound a little weird, but some people really like the flavor!
