After that, you need to cook the soy milk on a stove until it boils. It's important to keep stirring the milk during this time to prevent it from burning. Once it boils, reduce the heat and let it simmer for about 10 to 15 minutes.
During this process, the liquid will start to separate from the solids. The liquid is the doujiang, while the solid part is called okara. After simmering for a while, you must strain the soy milk to remove the okara.
You can drink doujiang hot or cold, and it has a slightly sweet and nutty taste. It is a healthy drink as it is an excellent source of protein and calcium. Doujiang is commonly consumed for breakfast in China, often served alongside savory Chinese fried dough sticks.
