Douzhi

Douzhi is a drink made by fermenting mung beans.

Fermenting means letting the beans sit in water for a long time until tiny microorganisms (called bacteria and yeast) start breaking down the beans and turning them into something new and tasty.

It's kind of like when your mom leaves bread dough on the counter to rise, or when you leave a banana in your lunchbox too long and it starts getting squishy and brown.

After a few days, the mung beans are super soft and slimy and they've turned into a slightly sweet drink with a tangy, sour taste.

Some people like to drink it straight, but others mix it with other things like sugar, ginger, or fruit to make it even tastier.

Douzhi is really popular in China, especially during the summertime because it's refreshing and helps cool you down. Plus, it has lots of healthy probiotics that are good for your tummy.
