Fermentation is when you mix grape juice with special little organisms called yeast. The yeast eat the sugar in the grape juice and make a fizzy gas called carbon dioxide. Just like when you blow up a balloon with your breath, the gas makes bubbles in the grape juice.
As the bubbles keep growing and multiplying, the grape juice starts to change into something new. It turns into wine! But it's not ready to drink yet. The wine has to sit for a while so the yeast can finish eating up all the sugar. This makes the wine a little bit stronger and less sweet.
Once the yeast has eaten all the sugar and turned it into alcohol, the wine is ready to be bottled up and enjoyed. But if the wine isn't stored properly, the yeast can start working again and make the wine go bad. That's why wine is usually kept in a cool, dark place until it's time to drink.
