History of cheese

Okay kiddo, so let's talk about cheese! Cheese is a very special food that has been around for a very long time.

A really, really long time ago, people were herding animals like cows, goats, and sheep. These animals would give milk, which was really important for people because it could be used to make lots of different things. One of those things was cheese.

So, how did cheese get made? Well, let's start with milk. Milk has a lot of things in it, like fat, protein, and sugar. When milk sits out for a little while, it starts to turn sour. Back in the day, people would leave milk out on purpose and let it get sour because they knew that this was the first step in making cheese.

After milk gets sour, people would add something called rennet to it. Rennet is something that comes from the stomach of cows, goats, or sheep. It helps to make the milk thick, so that it's easier to work with when making cheese. Once the milk is thick, people would cut it up into small pieces and separate the curds (the solid parts of the milk) from the whey (the liquid part of the milk).

After separating the curds from the whey, people would then do different things to the curds to make different kinds of cheese. For example, they might add salt, spices, or bacteria to the curds. This would change the flavor and texture of the cheese, making it taste different depending on what was added.

Over time, people in different parts of the world started making cheese in different ways. Some regions became famous for their cheese, like France for their soft cheeses and Italy for their hard cheeses. Today, there are many different kinds of cheese that you can find all over the world. Some are made with cow's milk, others with goat's milk or sheep's milk. Some are soft, some are hard, and some are even stinky!

So, that's the history of cheese in a nutshell. It all started a long time ago when people started herding animals and realized they could turn milk into cheese. And because people all over the world have been making cheese in their own special ways for thousands of years, we can enjoy all kinds of tasty cheeses today. Yum!
