Katsuobushi

Katsuobushi is a kind of fish that is really important in Japan. First, fishers catch a fish called bonito. Then, they cut it open, take out the guts, and cook it. After it cools, they smoke it for a while. Then, they let it dry outside in the sun and wind for a long time until it's super hard like a rock!

When it's ready, people use a special tool to shave off super thin slices of katsuobushi. These little pieces are used to make a broth called dashi that's really yummy and great for cooking noodles or soups. People in Japan love katsuobushi so much that they even put it on top of their rice balls and eat it as a snack!
