Pain in crustaceans means that the animals feel uncomfortable or hurt when something touches them. It is something that we can't see but is just as real as the pain people feel. Just like people, when something hurts them (like when they get pinched) they want to get away from the pain. So, if you poke a crab or a lobster, they will try to move away or pinch back so they can get away from the pain. They have nerves in their bodies just like we do, so they can sense when something is hurting them.
