Toshikoshi soba

"Toshikoshi soba" is a special type of noodles that people eat in Japan on New Year's Eve. These noodles are made from buckwheat flour and they are long and thin like spaghetti.

On New Year's Eve, people eat toshikoshi soba because they believe that it will bring good luck and help them have a long life. It is also tradition to finish eating the soba before midnight, to symbolize leaving all the bad luck and troubles of the past year behind.

To prepare toshikoshi soba, first you need to boil some water in a pot. Then you add the soba noodles and cook them for a few minutes until they are soft. After that, you drain the water and rinse the noodles with cold water to cool them down.

Finally, you can serve the toshikoshi soba in a bowl with some broth and some toppings like sliced green onions or tempura shrimp. It is a delicious way to celebrate the New Year and start fresh.
