Grease trap

Okay kiddo, do you like playing with toys in the bathtub? When you are done, do you notice some of the toys floating in water and some sinking down into the drain? That's because things that are heavier than water can't float and sink to the bottom. Similarly, there are things in a restaurant kitchen called "fats, oils, and grease" (FOG) that are heavier than water and can't dissolve in it. These FOGs come from cooking food, washing dishes, and cleaning equipment in the kitchen.

A grease trap is a container that is placed underground or inside a sink. It works just like the bathtub drain but instead of toys, it catches the FOGs in the water flowing down the kitchen sink. When the FOGs enter the trap, they get trapped inside the container because they are bigger and heavier than water. It's like when you try to pick up a large toy with one hand, and it doesn't fit or get lifted.

The water that goes through the grease trap flows to the sewer system but the FOGs stay in the trap. If the FOGs enter the pipes and sewers, they create blockages that cause backups and terrible smells. The grease trap is like a shield to stop these problems from happening.

Finally, the restaurant workers need to clean the grease trap regularly, just like how you need to clean your toys after playing with them. They scoop out all the FOGs from the trap, dispose of them properly, and then wash and rinse the trap thoroughly. This way, the trap is ready to catch more FOGs again when they flow down the sink.
