Once you have your fruits or veggies in the jar, it’s time to seal them up. This means putting a lid on the jar and making sure it’s really, really tight so no air can get in. After that, you put your jars in a big pot of boiling water. This is called processing.
Processing is important because it helps kill any bacteria that could spoil your food. After the jars have boiled for a while, they’re taken out of the water and left to cool. During cooling, the jar lids will suck inwards and create a vacuum seal so air can’t get in. This helps make sure everything stays fresh for a long time.
