JECFA

JECFA stands for the Joint FAO/WHO Expert Committee on Food Additives. It's a group of very smart people from all over the world who get together to talk about the things that we add to our food to make it taste better, look nicer or last longer.

The committee looks at the science behind the additives and figures out if they are safe for us to eat. They also look at how much of the additive people are eating, and if they are eating too much.

If an additive is found to be safe, the committee sets a limit on how much of the additive can be used in food. This is called the “acceptable daily intake”, which basically means the amount people can eat every day without it being dangerous.

So, JECFA helps to make sure that the things we add to our food won't make us sick, now or in the future.
