Kiviak is a special food that is eaten by people who live in a very cold place called Greenland. Kiviak is made from a bird called 'Auk'. People of Greenland take the bird called Auk, which is a small bird that can fly and they take out all the feathers and the guts (inside parts of the bird). Then they put many Auk birds inside a hollowed out seal (animal) and they seal it again with fat so that no air can get inside. When the seal is completely covered and sealed, they bury it deep in the ground for many months. During this time, the body of the Auk is slowly fermented by the bacteria present in the buried seal. Fermentation is a process in which something changes then turns into a different thing. In this case, the body of the Auk is changed into a kind of paste. When it is time to eat the Kiviak, they dig it out from the ground, remove the fermented Auk birds from the seal and enjoy the delicacy. People in Greenland think that Kiviak is very delicious and they love to eat it during the winter season when it is their favorite food.
