Nobi

Nobi is a special way of cooking rice in Japan. It's like cooking the rice with extra water, so it's really soft and moist.

First, you take some short-grain rice and rinse it really well until the water runs clear. Then, you put the rice in a pot with a lot of water (sometimes up to twice the amount of water as rice!). You bring the pot to a boil, and then turn down the heat really low and put the lid on.

The rice cooks slowly and gently in the pot, absorbing all the water and becoming really fluffy and tender. When it's done, you can eat it plain or use it as a base for other dishes like sushi or rice bowls.

Nobi rice is special because it has a really unique texture - it's not dry and fluffy like regular rice, but it's not mushy like porridge either. It's somewhere in between, with each grain of rice separate but also slightly sticky.

People in Japan love nobi rice because it's comforting and filling, and it goes well with a lot of different flavors. It's also considered very healthy because it's whole grain and retains a lot of the nutrients from the rice bran.
