Panela is a type of sugar that is made from a special kind of plant called sugarcane. The sugarcane is harvested and then crushed to get all of the juice out. The juice is then cooked and stirred until all of the water evaporates and the juice turns into a thick syrup.
This syrup is poured into a mold (like a big square cake pan) and left to harden. Once it has hardened, it is taken out of the mold and cut into smaller pieces. These pieces of hardened sugar are what is called panela.
Panela is very popular in some countries like Colombia, Mexico, and Venezuela, where it is used in lots of different foods and drinks. Some people like to dissolve it in water to make a sweet drink, while others use it to sweeten their coffee or tea.
