Plasmolysis is what happens when a plant cells absorbs too much water. Imagine you have a balloon that is filled with water, but then you fill it up with even more water. The balloon will get bigger and bigger until it starts to burst. Plasmolysis is similar to this. When a plant cell takes in too much water, the cell membrane starts to stretch and eventually bursts. The liquids inside of the cell (called cytoplasm) leak out, leaving the cell empty.
