Pommes Duchesse is a fancy French way of making mashed potatoes into a special shape. First, the potatoes are boiled and mashed with butter and cream until they are soft and smooth. Then, the mashed potatoes are put into special pastry bags with different nozzles at the end, just like you would use to decorate a cake. The pastry bag is squeezed to make small mounds of mashed potatoes with fancy ridges and swirls. These mounds are placed on a baking sheet and put in the oven until they are golden brown and crispy on the outside and soft and fluffy on the inside. They are a yummy and elegant addition to any meal!
