Pork jelly

Pork jelly is something made from pig bones, skin, and other parts by cooking them for a long time with some water. It's like making a soup or broth, but with pork parts specifically.

After a few hours of cooking, the liquid is drained and then refrigerated until it sets into a gelatin-like texture. This is because the pork parts contain a lot of collagen, which turns into gelatin when cooked for a long time.

So when you see pork jelly, it's basically the firm, jiggly result of cooking pig parts for a long time, then letting the liquid set into a gel. People often eat pork jelly with vegetables, bread or other foods for added flavor.
