Rappie pie is a special dish that comes from an area called Acadiana in Louisiana. It’s made from grated potatoes and meat like chicken or pork.
First, the potatoes are peeled and then grated up into tiny pieces. They’re then squeezed really tightly so all the liquid comes out, and the potato gets super dry.
Next, the potato is mixed with boiling water and left to absorb all the liquid. Once it cools down, the potato is again squeezed very tightly, so it becomes a solid mass.
Then the potato is mixed with chicken or pork that has been cooked and shredded into tiny pieces. It's then seasoned really well with salt, pepper, and other spices to make it taste good.
Finally, this mixture is put into a pie dish and baked in the oven until it’s crispy and golden brown on top. Now you have a delicious rappie pie to enjoy!
