Synaeresis

Okay kiddo, imagine you made some jiggly jello wobbles and left them in the fridge for a while. After some time, you noticed some clear water on top of the jiggly part. That's similar to what synaeresis is. It happens when a gel or a thick liquid starts releasing some water and becomes harder or more solid. So, it's like your jiggly jello squeezed out some droplets because it became too squishy to hold all the water inside.

In scientific terms, synaeresis is a process that happens when the molecules in a liquid or a gel start packing themselves closely together. As they do this, they push the water out of the spaces between them and collect as droplets. Synaeresis can happen under different conditions, like when you mix ingredients together, heat or cool them, or stir too much. But it's not always a bad thing. It can also make some food products, like cheese or yogurt, thicker and more delicious.
