Crustless bread is just like regular bread, but with the crunchy crust part taken off. When you make bread, the outside part gets crispy and brown in the oven, and that's what we call the crust. Some people don't like the crust because it's too hard to chew or tastes different from the inside of the bread. So they take it off and make crustless bread. It's still soft and doughy like normal bread, but it doesn't have the crunchy part on the outside.
