Curanto is a very special way to cook food that comes from a place called Chile. There, people have been using this special cooking method for hundreds of years. It's a lot like a big, outdoor oven that uses hot rocks to cook the food.
First, people dig a hole in the ground and heat up some rocks by building a fire on top of them. When the rocks are very hot, they take out the fire and put layers of leaves, seafood, meat, and vegetables on top of the hot rocks. They put more leaves on top of it all and cover everything with dirt and rocks so it can cook for a few hours.
When the time is up, people dig everything out of the ground and open the layers of leaves to reveal the delicious food inside. The seafood is perfectly cooked and the meat is so tender it falls off the bone. It's a really special dish that people share together with their family and friends.
