Ivan Pavlov was a man who did a lot of experiments with dogs a long time ago. He was interested in how dogs learned to do things like salivate (make spit in their mouth) when they heard a certain sound or saw a certain thing.
Pavlov found out that dogs naturally salivate when they see or smell food. He also found out that if he rang a bell before giving the dogs food, they would eventually start to salivate just when they heard the bell, even if there was no food around. This is called conditioning.
Pavlov's experiments helped us understand how animals (and people!) learn to do things based on what happens around them. That's why he is famous and people still talk about him today.
