Kinilaw

Kinilaw is like a special Filipino dish that is made with raw fish or seafood. But it's not just any raw fish and seafood! First, the fish is cut into small bite-sized pieces and mixed with some yummy ingredients like vinegar, lemon or calamansi juice, onions, chili peppers, and salt.

But here's the cool part! The vinegar and lemon or calamansi juice actually cook the fish! Sort of like how when you put lemon juice on a piece of meat, it sort of changes its texture and taste. Same thing with kinilaw! The vinegar and lemon or calamansi juice make the fish taste tangy and yummy but it's also safe to eat because it's "cooked" in a way.

Kinilaw is usually enjoyed as an appetizer or snack, and it's very popular in the Philippines because it's super tasty and refreshing on a hot day!
