Miraculin

Miraculin is a protein that can change the way things taste. When you eat something sour or bitter, like a lemon or pickles, your tastebuds send a message to your brain that it doesn't taste good. But miraculin can block this message and make sour and bitter foods taste sweet instead.

It's like a magic trick for your tongue! The miraculin turns off the parts of your tastebuds that detect sour and bitter flavors and turns on the parts that detect sweet flavors. This makes even the sourest things taste like candy.

People have been using miraculin for a long time to make sour or bitter foods taste better. They might use it to make vinegar taste like sugar, or to make sour fruits like grapefruit taste sweeter.

But you have to be careful when using miraculin because it can't make things magically healthy. Sour or bitter foods might taste better, but they can still be bad for you if you eat too much of them!
