Piti (food)

Piti is a yummy soup that is made with beef and chickpeas. It's a traditional dish from Azerbaijan and it's really popular there. Piti is cooked in a special earthenware pot called a piti. First, the beef and chickpeas are cooked with some onions and spices. Then, the mixture is put into the piti pot and covered with a lid. The piti pot is buried in hot coal (like a mini fire), and it's left to cook for a few hours. The heat from the coal makes the soup really hot and steamy. When it's ready, the piti pot is removed from the fire and the lid is taken off. You can smell the delicious soup from far away. People usually eat piti with some special bread called lavash and some herbs like cilantro or mint. Yum!
