Abgoosht

Abgoosht, also known as "dizi" in some regions, is a delicious traditional Persian stew that is made with meat, beans, and vegetables. It is a very popular dish in Iran and is often served during family gatherings and celebrations.

To make abgoosht, first, some lamb or beef is cooked in a pot with water, onions, and spices. Once the meat is tender and falling apart, it is removed from the pot and set aside. The remaining broth is then strained and separated from the cooked vegetables and herbs.

Next, beans and potatoes, as well as any other vegetables of choice, are added to the broth and simmered until they are tender. The cooked meat is then mashed and added back into the pot, along with some of the reserved vegetables and herbs. The stew is then ready to be served.

Traditionally, abgoosht is eaten by crushing pieces of flatbread into the broth until it becomes a thick and hearty soup. Some people also add a dollop of sour cream or yogurt on top for extra flavor.
