Sampling is a way of getting information about a group by studying a smaller version of it. Imagine if you wanted to know about all the kids in your school, but you couldn't ask them all. Sampling is like picking a few kids at random, asking them questions, and using the answers to learn about all the kids in the school. For example, you might pick 10 kids at random, ask them their favorite subject in school, and then use their answers to figure out what the favorite subject of all the kids in your school is.
