Triple-cooked chips

Triple-cooked chips are a special way of making French fries or chips that makes them extra crispy and delicious! Usually, when we make fries, we just cut up the potatoes and cook them once in hot oil. But with triple-cooked chips, we cook them three times to make them even better.

First, we start by cutting the potatoes into long, thin strips, just like regular fries. Then, we bring a big pot of water to boil, and we put the potato strips into the boiling water. We cook them in the boiling water for a little while, until they start to get a bit soft. This is called the first cook.

After the first cook, we take the potato strips out of the pot and let them cool down for a little bit. This helps to remove some of the moisture from the potatoes. Moisture is what makes fries soggy, so we want to get rid of as much of it as possible.

Once the potato strips have cooled down, it's time for the second cook. We heat up a big pot of oil and carefully put the potato strips into the hot oil. We cook them in the oil until they turn golden brown and crispy. This is the second cook, and it's where the fries start to get really tasty!

But we're not done yet! After the second cook, we take the fries out of the oil and let them cool down again. This gives them a chance to get even crispier on the outside and still soft on the inside. Once they are cool, it's time for the third cook.

For the final cook, we heat up the oil one more time and put the fries back in. We cook them for a short amount of time, just until they become super crispy and golden brown. This is the third cook, and it gives the fries that crunchy outer layer that makes them so yummy.

Now, after the third cook, our triple-cooked chips are ready to be enjoyed! They are super crispy on the outside, fluffy on the inside, and have a delicious, rich flavor. They are the tastiest and crispiest fries you will ever have!
