Bletting is a process that happens to some fruits, like persimmons, when they get really ripe.
Imagine you have a toy car that you love playing with. Over time, the wheels of the car get very soft and squishy, almost like the toy car is made out of silly putty instead of hard plastic. That’s kind of what happens to fruit during bletting. As the fruit ripens, the insides start to break down and get really soft, like mushy clay.
This might not sound very appetizing, but actually it can make the fruit taste really good! Once the inside gets really soft, it can change the texture and flavor of the fruit in a really delicious way. Think about how a banana tastes different when it’s very ripe and has brown spots on the skin compared to when it’s still green – that’s kind of what happens during bletting.
So if you ever eat a fruit and it’s super, super soft and almost mushy on the inside, chances are it’s gone through the bletting process. And while it might not be everyone’s favorite texture, some people really love it!
