Borș de burechiușe is a traditional Romanian soup that is made with small, doughy dumplings called burechiușe.
The dumplings are made by mixing flour, water, and salt together to form a thick dough. The dough is then rolled out into small, bite-size pieces and boiled in water until they float to the surface.
To make the soup, vegetables like carrots, onions, and celery are chopped up and cooked in a pot with some oil until they are soft. Then, water and some fermented wheat bran called borș is added to the pot. This gives the soup a tangy and slightly sour taste.
Once the broth is simmering, the cooked burechiușe dumplings are added along with some herbs like dill and parsley. The soup is then allowed to cook for a little while longer until all the flavors have blended together nicely.
When it is all finished, the borș de burechiușe soup is usually served hot with a dollop of sour cream on top. It is a filling and comforting meal that is perfect for cold days or when you need a little comfort food.
