Burong isda

Burong isda is a Filipino dish made of fermented fish mixed with rice. Fermentation is the process where yeast and bacteria turn sugar into acid or alcohol, and in case of burong isda, it happens naturally after you place raw fish into a container with cooked rice.

Think of it like making mud pies or playing with Play-Doh. The fish and rice are like clay, and when you mix them together and let them sit for days, they transform into something new and delicious.

After fermentation, the rice grains turn sour and the fish becomes softer and smoother. Some people also add spices like ginger, garlic, or chili peppers to give it a unique flavor.

Burong isda is often used as a condiment to add flavor to other dishes, like a spoonful of salsa on top of a taco. It can also be eaten on its own, like a snack. Because the fish has been fermenting for days, it's important to make sure it's safe to eat before consuming.
