An emulsion is like shaking up salad dressing. Do you notice that when you pour salad dressing out of the bottle, it has two separate layers? That's because oil and water don’t mix well on their own. But if we shake the bottle really hard, the oil droplets will mix up with water droplets and form a creamy and delicious dressing.
An emulsion is when we mix two liquids that usually don’t mix together, like oil and water, and then we make them stay mixed up. We can do this by using a third ingredient called an emulsifier, which basically holds the oil and water droplets together so they don’t separate.
Emulsions are not just limited to salad dressing. We use them in many different things, like mayonnaise, milk, face creams, and even some medicines. Thanks to emulsions we can enjoy many different products that wouldn’t be possible without them!
