Stellar evolution is like growing up for stars. Just like people grow up over time, stars change and evolve over time too! Just like when people grow up, they go through many stages like starting out as a baby, then growing into a child, becoming a teenager, and in the end, becoming an adult. In the same way, stars go through stages of stellar evolution too-- they start out as big clouds of dust and gas (just like the material that the universe is made out of), and then grow bigger and bigger until they become a star like our Sun. The star grows and gets brighter until it uses up all the fuel in its core (like when an adult runs out of energy) and it becomes a different type of star, called a white dwarf star. This stage is the end of stellar evolution.
