Ultra-high-temperature processing is a way that we can keep milk from going bad for longer. We heat the milk up really, really hot- so hot that all the bad bacteria that make milk go bad are killed. It's like when you cook your food to make sure it's safe to eat.
In the factory, the milk is put through a special machine that heats it up to around 280 degrees Fahrenheit (which is super hot!). This step doesn't take long at all, just a few seconds. After the milk is heated up, it's cooled down really quickly and put into a special kind of carton that keeps it fresh.
When you go to the store and buy milk, you can leave it in your fridge for a really long time because all the bad bacteria have been killed. The milk might taste slightly different because it's been heated up so much, but it's still safe to drink!
