Rice congee is like a warm and comforting soup made from rice grains that have been cooked in lots of water for a long time. It's similar to oatmeal, but instead of oats, we use rice grains that get really soft and mushy after being cooked for a long time. It might sound weird to have rice for breakfast, but it's actually really good!
First, we take some rice grains and wash them really well to get rid of any dirt or dust. Then, we put the rice into a pot along with lots of water and turn on the heat. We let the rice cook for a really long time, stirring every now and then to make sure it doesn't stick to the bottom of the pot. As the rice cooks, it absorbs the water and gets really soft and mushy.
After a few hours, the congee is ready! It's served in a bowl and can be topped with all sorts of things like poached eggs, green onions, soy sauce or even chicken or seafood. Eating rice congee is like giving yourself a big warm hug on a chilly day or when you're feeling under the weather. It's also a great way to start your day with a healthy, filling meal.
