Barbacoa

So, you know how mommy and daddy sometimes cook meat for dinner? Well, there's a special way of cooking meat that's called barbacoa. It's a way of cooking that goes way back, before there were stoves and ovens.

Here's how it works: First, they dig a hole in the ground and put some hot coals inside. Then, they take some meat (usually beef or lamb) and wrap it up in big leaves, like banana leaves. Then they put the wrapped meat on top of the hot coals.

The meat cooks slowly, over many hours, while they add more coals to keep it hot. And because it's wrapped up in leaves, all the juices stay inside and make the meat really tender and flavorful.

Once the meat is cooked, they take off the leaves and shred it up into little pieces. Then they serve it with some tortillas, onions, and cilantro. Yum!

So, that's what barbacoa is - a special way of cooking meat that's been around for a long, long time.
